Loving the colors and texture of the purple cabbages right now.
I've never grown them before and am finding them even prettier than the ornamental cabbages that are usually grown for decorative purposes.
Of course, they are much larger, with leaves that are very thick and leathery.

Cabbage Salad (with Verjuice)
ReplyDeleteI usually make this with green cabbage, but you may like to try it with one of your magnificent red cabbages. Add a half a teaspoon of sugar to half a cup of verjuice and stir well. Mix half a cup of freshly shaved Parmesan cheese through the cabbage then toss through the verjuice. (Season if necessary.)

ReplyDeleteWe love to do a quick pickling for cabbage. Just chop it finely along with some onion. I like to add a little sliced carrot and crushed garlic as well. Cover with water boiled with some sugar. Season with salt. Pour in vinegar, any kind you like. Let that marinate in the fridge for several hours. This usually disappears within a couple days in our house!
I season everything to taste...

ReplyDeleteI like cabbage raw [so the salad above sounds great]... or just lightly sauteed.. sure there is something about releasing different vitamins when lightly cooked..
The colour of those cabbages is wonderful.. makes a lovely mosaic..

But here very shortly for a salad: Cut the cabbage in very fine stripes, and toss it with a mix of a few drops of soja sauce, raspberry vinegar, olive oil and a tiny bit of sugar, you can add walnuts or other kind of nuts, or...
